Fennel

Fennel is a hardy, perennial, umbelliferous herb, with yellow flowers and feathery leaves. It’s a highly aromatic and flavorful herb with culinary and medicinal uses, and is one of the primary ingredients of absinthe. Their inflated leaf bases also known as bulbs are eaten as a vegetable, both raw and cooked. Its taste and aroma are similar to anise, though not as strong.
